- Sweet Potato - 2 lbs. cubed
Peel the sweet potatoes.Cube them keeping pieces consistent in size to ensure even cooking.Place them into a large sauce pot and fill with water until they are just covered.Bring to a boil and then lower to medium heat and continue cooking for 15-20 minutes until they are fork tender.Remove from heat and strain. Run them under cold water for three minutes to stop the cooking process.Place half the potatoes into a blender or food processor. Blend with a touch of water until you reach your desired consistency. Repeat with remaining potatoes.Once finished place into storage containers. This will keep in the fridge for three days or in the freezer for three months.
I made approximately 50 ounces of baby food from two pounds of potatoes that cost me only one dollar. If I were to buy 50 ounces of food from the market pre-made I would have spent $10. That is a $9 dollar savings! Imagine how much it would add up to if I made all the food...
I have a six month old at home and she has started on solid food. I had yet another steal at Brothers Farmers Market. I got two pounds of sweet potatoes for $1. I had no clue what I was going to use them for. After a couple days of recipes going through my head I went to the cabinet to realize I needed to go to the market for some more baby food. Lightbulb moment…I can make my own! Such an obvious thought and so simple. I think I may make all of her fruits and veggies from here on out, why not?
