Sweet Potato and Goat Cheese Pizza

Prepare Pizza Crust or use store bought.

Preheat oven to 425 degrees Fahrenheit.

Roll out pizza dough in a 14 inch round. Using a fork, poke holes all over the pizza to eliminate the amount of air bubbles while baking. Bake for 5 minutes.

Meanwhile, peel and slice sweet potatoes into 1/8 inch slices.

Microwave the slices for 5 minutes or until tender. This is important or the sweet potatoes will be far too crunchy once the pizza is done. You want them to be soft.

Remove the pizza dough from the oven and brush with olive oil. Line the sweet potato slices around the pizza. Lightly brush with olive oil.

Add fresh toppings. Start with a slice of roasted red pepper. Add about a 1 Tablespoon dallop of goat cheese (I used honey semi soft goat cheese) on top of the pepper. Add Sun dried tomatoes (make your own ahead of time using this recipe) and a Kalamata olive to each slice.

Goat Cheese and Healthy Sweet Potato recipe with Weight Watchers Points

Bake for 5-7 minutes or until the pizza crust is firm and the toppings are golden brown. If your oven does not get the toppings golden brown after 7 minutes, set the oven to broil and bake an additional 3 minutes, watching carefully that the pizza does not burn.

Remove from the oven and sprinkle with the chopped parsley.

A few years ago my family and I traveled to Sydney, Australia. We’ve found that Australia, in general, has the most amazing coffee and the best crepes and flat bread pizzas on the planet. To be fair we haven’t had the chance to visit Italy yet, which I’ve been told cannot be beat.

I was looking through our picture book from our Sydney trip and came across a picture of sweet potato and goat cheese pizza I had for dinner one night. This is one of those meals that makes my mouth water just thinking about it. I decided to recreate it and was not disappointed!
