Spinach, Sun Dried Tomatoes and Mozzarella Stuffed Mushrooms

Preheat the oven to 400 degrees Fahrenheit.

Spray a pie pan with non-stick cooking spray.

Using a sharp knife and small spoon, remove the mushroom stems and slightly hallow out the inside of the mushroom caps.

Chop the mushroom stems and insides for later use.

Stuffed Mushrooms with Spinach, Sun Dried Tomatoes and Mozzarella Recipe

In a medium size bowl combine the chopped spinach, diced sun dried tomatoes, chopped mushrooms, onion powder, garlic powder and mozzarella wedges. Mix well.

Stuff the mixture into the prepared mushroom caps, placing them very close together (touching each other) in the pie pan.

Sprinkle with parmesan cheese.

Bake for 20 minutes or until golden brown on top.
