Preheat the oven to 400 degrees Fahrenheit.
Spray a pie pan with non-stick cooking spray.
Using a sharp knife and small spoon, remove the mushroom stems and slightly hallow out the inside of the mushroom caps.
Chop the mushroom stems and insides for later use.
In a medium size bowl combine the chopped spinach, diced sun dried tomatoes, chopped mushrooms, onion powder, garlic powder and mozzarella wedges. Mix well.
Stuff the mixture into the prepared mushroom caps, placing them very close together (touching each other) in the pie pan.
Sprinkle with parmesan cheese.
Bake for 20 minutes or until golden brown on top.
Each stuffed mushroom (medium size) is approximately Weight Watchers 2 PointsPlus.
I wanted to find some delicious and healthier alternatives for snacks and happy hour appetizers at our last get together. These stuffed mushrooms were perfect! Each one packs a delicious amount of flavor and soon became the party favorite.
