Preheat oven to bake at 400 degrees.
On a foil covered baking sheet, combine turnips, olive oil, salt, pepper, and thyme. Mix until evenly coated. Make sure the turnips are in an even single layer. Total roasting time is typically 50 minutes. Every 15 minutes, remove, stir up and redistribute turnips before placing back in oven. Turnips are done roasting once the edges have browned. Taste for salt and pepper; add more if needed. Serve immediately.
While shopping for produce at Brothers Farmers Market I ran into a clearance item I couldn’t refuse. A package of 12 large turnips for $1! I knew I could easily roast these and have a tasty side dish for dinner.
