Set your oven to 350 degrees.
Cut the sweet potato into one inch cubes. Place on baking sheet, spray with cooking spray and sprinkle on garlic seasoning. Place in oven and cook for 40 minutes.
Spray cooking spray into a large sauté pan. Add in onion and peppers. Cook for five minutes and then add in turkey sausage. Cook through and add all remaining ingredients. After 3 minutes add stock and scrap bits off the bottom of the pan. Reduce to low heat and continue to cook until potatoes are out of the oven. Approximately 10 minutes.
Serve immediately. Enjoy!
This recipe is a product of needing to go grocery shopping but not wanting to at the moment. So I literally looked in my fridge and pulled out every ingredient I had and went to my creative place. Roasted anything tastes good and I just happened to have a single sweet potato so that was easy. The rest just came together when I looked at it all sitting on my counter. I do this often as I only cook with fresh ingredients so I frequent the market a lot. Probably like 3 times a week!
This meal ended up being very tasty and I will actually make it again. My hubby also enjoyed them for lunch the next day and said it tasted even better then. Enjoy!
