Preheat the oven to 425 degrees Fahrenheit.
Coat a 9X13 pan with cooking spray.
Peel and slice your vegetables in 1/2 - 1 inch thick slices.
Layer the vegetables in the pan, spray with Olive Oil cooking spray and sprinkle with the Thyme.
Bake for 30-40 minutes until tender and slightly browned on top.
