Pesto Rotini with Spinach

In a medium size saucepan bring water to boil for the noodles. Once boiling, pour in noodles and cook to package specifications.

NOTE: Reserve 1/2 cup of the noodle water for later.

Strain the noodles and put them back into the same saucepan.

Meanwhile, in a blender or food processor combine the olive oil, garlic, basil and fresh spinach. Add water to thin. Viola! You've just made pesto! Go ahead... Give yourself a pat on the back!

Add the pesto mixture to the strained noodles. If needed, add the reserved noodle water (a little at a time) until you've reached your desired consistency.

This year we had a huge basil crop! We had basil coming out of our ears and needed to find something to do with it. We ended up drying much of it and now we have dried basil that tastes amazing.

My kids love what they call, Green Noodles! Essentially, noodles with pesto sauce. Fresh basil is hard to come by during the cold WI winters so my brilliant husband decided to come up with his own version of pesto and it turned out….AMAZING! The trick is using dried basil but adding spinach to make the “green” effect. See? Brilliant!

My kids actually asked him if he could make it every night for dinner!
