Mint Chocolate Brownie Bites

Typically, I like to come up with my own recipes but this time I was in a pinch. I needed to make a Weight Watchers friendly snack to bring to a women's get together. So, I scoured the web and found this one.

I found the base for this recipe on but decided to make it my own by halving the size and adding some additional chocolate!! Who doesn't love more chocolate??

I found the original recipe to be a bit too cake-like and wanted something more chewy and more chocolatey. I hope you enjoy this variation as much as I do!

  • Prep Time : 10 minutes
  • Cook Time : 15 minutes



Preheat oven to 350 degrees Fahrenheit.

In a bowl, stir together the flour, brown sugar, cocoa, baking soda and salt.

In another bowl stir together remaining ingredients.

Pour water mixture over flour mixture and mix to a smooth consistency.

Spray 24 hole mini muffin pan with non-stick cooking spray or use a nonstick pan. Fill each hole 3/4 way with batter.

Place a Hershey Kiss (I used mint) point side down in the middle of each mini brownie.

Bake approximately 10-15 minutes (various oven temperatures may vary) or until a toothpick inserted into the middle of the brownie comes out clean.

Let the brownies cool completely. They will pop out of the pan perfectly by simply placing your fingers gently on the tops of the brownies and spinning them until they slide loose.

Make these even more decadent by placing a dollop of Whipped Cream on top!


These brownies are Weight Watchers PointsPlus 2 per brownie.


I love these brownie bites because they are full of flavor, the perfect size for a couple of bites without the feeling of overdoing it and incredibly simple to make. The best part is they are only 2 Weight Watchers PointsPlus per brownie!
