Preheat oven to 350 degrees Fahrenheit.
In a medium size mixing bowl combine the beef (you can also use ground chicken, turkey or tofu), egg and bread crumbs.
Mix thoroughly. I find that mixing by hand seems to work best. My kiddos especially love to help with this part!
Spray a baking pan with cooking spray. Roll meat mixture into 1 1/2 inch balls (or size of choice).
Bake for 20 minutes or until cooked through. If you want your meatballs a little more crispy, broil them for a few minutes (watching carefully so they don't burn).
Recipe makes about 16 - 1 1/2 in meatballs (4 servings). Each serving is Weight Watchers PointsPlus 5.
This is one of those recipes that is perfect for teaching little fingers how to cook. My 6 year old daughter loves to help out however she can in the kitchen. With this recipe she gets to do the entire thing on her own (with the exception of using the oven) and she gets to get her hands dirty. Hello?! What kiddo wouldn’t love this?!
The best part is that this recipe is versatile enough that the meatballs can be made small enough to be appetizers, large enough to be the main portion of the meal or can be made the perfect size to add to an Italian pasta dish.
