Preheat oven to 350 degrees.
In a small mixing bowl combine mustard and honey. This can be done in advance if needed.
Lay chicken breasts on cutting board and brush with olive oil. Sprinkle with salt and pepper. Brush with half of the honey mustard mixture.
In a shallow dish dredge the chicken into the panko and coat well.
Arrange on a baking sheet careful not to crowd.
Bake for 20-25 minutes until internal temperature is 165 degrees and panko is browned.
Serve with remaining honey mustard for dipping.
