Prior to beginning, have your ingredients measured out and ready to go.
In a sauce pan heat the coconut milk. Add all other ingredients.
Stir well and let simmer until it reaches your desired consistency. This typically takes about 5 minutes when I make mine.
Serve the peanut sauce over chicken, pork or beef, with wilted spinach or steamed broccoli.
My favorite is to layer a bowl with rice, grilled chicken and slightly wilted spinach. Then pour the sauce over the top. Fast and Yummy!

We paired ours with Roasted Chicken Breast – lightly brushed with olive oil, salt and pepper.
I have found this Peanut Sauce recipe to make a HUGE batch. You could easily 1/2 the batch and still feed your family of 4 plenty.
