Start with fresh corn tortillas. Using a sharp pair of kitchen scissors or a knife, cut each tortilla into 6 pieces.
Fill a medium or large frying pan with about 2 inches of oil. We used canola oil but you can use whatever oil you prefer. Heat the oil so that it's nice and hot. You should be able to drop a crumb into it and watch it cook evenly. If the crumb darkens too quickly, your oil is too hot and will burn your chips.
Drop the corn tortilla pieces into the oil one by one.
Once the chips are done to your preferences, take them out using metal tongs, and place them on a plate lined with a paper towel. The paper towel will soak up a lot of the grease.
Let cool slightly. Sprinkle with salt (if desired) and Enjoy!
