Pour milk into large saucepan. Bring to boil slowly on medium heat. Continue stirring to avoid burning on the bottom of the pan. When bubbles appear or you reach a temperature of 190 degrees turn off the heat. Add the vinegar , stir and leave on the stove top for 15 minutes.cheese begins to seperate

Add in any flavor you want at this point. This is when I add the salt. Other options are fresh herbs, red pepper flakes, maple syrup...get creative.

Pour into a strainer lined with a thin dish towel or cheese cloth. Straining the curdsSqueeze to remove as much liquid as possible. Molding the cheese

Mold into whatever shape you want using a dish or cup. Refrigerate for at least one hour before serving.Homemade Cheese RecipeEnjoy!


So I had a half gallon of milk that was going to go bad at any moment. I knew we would not drink it in time but I didn’t want to waste or throw away a perfectly usable ingredient.  Usually milk on the verge of going bad goes into a baked good but today I was feeling creative. It turned out fantastic. I even made two separate batches so they could have different flavors. The spicy batch was a little bit crumbly (I think I could have gotten more liquid out) but it crumbled like feta. The salty batch was firm and cut nicely. Both were delicious!
