Preheat oven to 425 degrees.

In a large skillet heat olive oil. Add in carrot, celery and onion and cook on medium-high for 5 minutes. Add garlic and continue to cook for 1 minute. Set aside to cool.

In a large bowl add turkey, herbs, spices, egg and breadcrumb. Add in vegetable mixture and stir to combine, careful to not over mix. Mold into a loaf pan.

In a small bowl combine ketchup and balsamic. Spoon over the top of the meatloaf.

Bake for 45 minutes. Remove from oven and let rest 10 minutes before slicing.

I enjoy the feeling of eating a meal that is so satisfying and also good for my waistline. That is why I created this guilt free meatloaf recipe. So I could feel satisfied and guilt free at the same time, and boy did I. One word…YUM!
