- Carrots - 1 1/2 cups diced
- Celery - 1 1/2 cups diced
- Onion - 1 1/2 cups diced
- Mushroom - 1 cup diced
- Ground Turkey - 1 pound
- Garlic - 4 cloves minced
- Fresh Parsley - 1/4 cup chopped
- Fresh Thyme - 1 tablespoon chopped
- Red Pepper Flakes - 1/2 teaspoon
- Salt and Pepper - to taste
- Egg - 1
- Panko Breadcrumbs - 1/2 cup
- Ketchup - 1/4 cup
- Balsamic Vinegar - 1/8 cup
- Olive Oil - 1 tablespoon
Preheat oven to 425 degrees.
In a large skillet heat olive oil. Add in carrot, celery and onion and cook on medium-high for 5 minutes. Add garlic and continue to cook for 1 minute. Set aside to cool.
In a large bowl add turkey, herbs, spices, egg and breadcrumb. Add in vegetable mixture and stir to combine, careful to not over mix. Mold into a loaf pan.
In a small bowl combine ketchup and balsamic. Spoon over the top of the meatloaf.
Bake for 45 minutes. Remove from oven and let rest 10 minutes before slicing.

So I could feel satisfied and guilt free at the same time, and boy did I. One word…YUM!
