- Apples - 3 whole - any variety
- Cinnamon - 1 Tablespoon
- Butter (or Earth Balance Dairy Free, Soy Free Substitute) - 2 Tablespoons
- Brown Sugar - 1/3 cup - packed
- Mini Marshmallows (soy & dairy free) - About 36 or a large handful (optional)
Preheat oven to 425 degrees Fahrenheit.
Coat a 9X9 baking dish with cooking spray.
Cut the apples in half and core them. Using a melon baller makes this process very easy.
Place the apples skin side down in the dish.
Sprinkle apple halves with cinnamon. Place a bit of butter in each apple half and sprinkle with the brown sugar.
Bake for 20 min.
Sprinkle with the marshmallows. Bake an additional 3-5 minutes or until marshmallows are lightly browned. Watch closely as they can burn quickly.
Let cool and serve in individual bowls. Divide and pour the remaining juices in the pan over each individual serving.
