Preheat the oven to 350 degrees Fahrenheit.
Prepare 2 baking sheets with non-stick liners or parchment paper.
In a mixing bowl (I used an electric mixer but it's not necessary) combine the peanut butter and sugar. Mix until smooth and slightly fluffy.
Add the egg until well combined.
Add the salt, baking soda, and vanilla until well combined.
Using your hands and a soup spoon, spoon about 1 heaping Tablespoon into the palm of your hand. Squeeze the dough into a ball shape.
Place the dough ball on the lined baking sheet and using a fork, gently press the dough flat in two directions to make the crisscross pattern.
Leave about 1 inch between each cookie. They won't spread out much and will stay true to the form you shaped them to.
Bake for 10 minutes. My oven is a bit tricky sometimes so I prefer to err on the side of caution and bake for 5 minutes, rotate the pan and bake for an additional 5 minutes. My cookies came out crunchy on the outside and perfectly soft and moist on the inside. If you want a crispier cookie, bake an additional 2-3 minutes.
Once the cookies are done, to eliminate them falling apart, leave them on the baking sheet for an extra 5 minutes before moving them to a wire cooling rack.
This batch should make approximately 15 cookies. Each cookie is Weight Watchers PointsPlus 4.
Have you noticed that the gluten free trend is on the rise? I have! As I’ve started switching some of my usual recipes over to gluten free I’ve also noticed that I’m feeling better. Less bloated and I don’t feel so “heavy” after meals. There may be something to this gluten free thing. (wink)
