Preheat your oven to 425 degrees Fahrenheit.
Line a baking sheet with foil. Spray with non-stick cooking spray.
Cut your cauliflower head into small 1 inch pieces.
In a small bowl, combine garlic and salt. Add the cauliflower to the mixture and toss to evenly coat.
Pour the cauliflower onto the baking sheet and spread them out evenly.
Spray with Olive Oil cooking spray.
Bake for 1 hour, turning the cauliflower every 5-15 minutes to evenly roast them.

I came across a similar recipe and was intrigued! Would these things really be crunchy like popcorn and just as satisfying as a treat? The answer was YES and then some! Don’t just take my word for it. Try them! I’ve found that the darker they get, the better they taste. But that’s my preference. What’s yours?
Here’s the trick: You really do have to flip the florets every 5-10 minutes so they cook evenly. Watch carefully towards the end of the cooking time to make sure they don’t get too dark. Also, the more evenly sized the florets, the better.
