Crispy Roasted Sliced Potatoes

Preheat oven to 425 degrees Fahrenheit.

Wash and dry the potatoes.

Slice the potatoes in 1/4 in slices (DO NOT cut all the way through). This will help your potatoes hold together and stand up straight allowing them to bake to a perfect crisp. It will also make it much easier to handle them.

Place the potatoes on a baking sheet. Spray with Olive Oil cooking spray and sprinkle with desired spices. I chose garlic powder and salt and pepper.

Bake 30 minutes until tender and crispy on top.


Each medium size potato is 1 serving. Weight Watchers PointsPlus 4 per serving.

I’m sure you’re like me and love to have easy options for dinner. This recipe couldn’t be any easier! Slice up your potatoes, spray them with olive oil cooking spray, sprinkle your favorite spices over the top and place them in the oven. Use your extra time to run around the house like a crazy person doing the last minute clean ups and homework checks. At least, that’s what I do.

I hope you’re able to settle down with a good book and a nice glass of wine next to a crackling fire while you smell those delicious aromas coming from your oven. If this image just isn’t your life (or mine most days) just take a second to close your eyes and picture it. Tune out the kids yelling in the background. Sigh.
