If I would have known these were so easy to make and so tasty, I would have been making them for years. Break up the bars into chunks and add them to your yogurt! Mmmmmmm!

In a food processor or blender chop the almonds until ground well with only some small chunks.
Add the shredded coconut and dates until well combined.
Add the coconut oil and process until the mixture starts to stick together and would hold well in a pan.
Taste. If you need it sweeter add the honey.
Prepare a square baking pan lined with wax paper. Press the mixture evenly into the pan and refrigerate for about 2 hours. Cut into 12 pieces (about 3X2 each).

Our family is taking a road trip for the holidays. As we spend about 13-16 hours in the car at a stretch (I know that some of you are groaning just thinking about this. But I swear, our family really looks forward to it!) it’s important to have good, healthy meals and snacks to keep the grumpies away and our energy up. I wanted to try something new this year and while checking out other great sites like Root Newtrition, by my good friend Stacey, I’ve stumbled upon a lot of delicious Lara Bar recipes. Check out her Apple Pie or Banana Blueberry bars. TO DIE FOR!! Taking all of these into account I’ve made this version that tastes just like Coconut Cream Pie and is packed with all sorts of delicious and healthy ingredients.
