- Sweet Potato - Medium
- Cinnamon - 2 teaspoons
- Sugar - 3 teaspoons
- Butter (or Earth Balance Dairy Free, Soy Free Substitute) - 1 teaspoon melted
- Olive Oil Cooking Spray
Preheat oven to 425 degrees Fahrenheit.
Wash and dry the sweet potato.
Slice the sweet potato in 1/4 inch slices (DO NOT cut all the way through the potato). This will allow the potato to sit upright and obtain the crispiness you're looking for.
Spray a glass bread pan with cooking spray OR line a baking pan with tinfoil (Makes for an easier clean up as cinnamon and sugar tend to harden to the pan quickly after cooling).
In a small bowl combine the melted butter, cinnamon and sugar. Substitute Pumpkin Pie Spice Mix for a festive taste.
Place the sweet potato in the prepared pan and brush with half the cinnamon and sugar mixture.
Bake for 15 minutes. Brush remaining butter mixture on the sweet potato.
Bake an additional 5-15 minutes (depending on your oven) until tender on the inside and crispy on the outside. -- Check often so you don't overcook and end up with a mushy sweet potato.
