- Egg White - 1
- Granulated Sugar - 4 Tablespoons
- Vanilla - 1 teaspoon
- Salt - 1/8 teaspoon
- Semisweet Chocolate Chips (or soy free, dairy free option) - 1 cup
Preheat the oven to 325 degrees Fahrenheit.
Line a baking sheet with oven paper or a silicon baking liner.
In a medium size mixing bowl combine the egg white and sugar. Beat until light and fluffy.
Add the vanilla and salt until well combined.
Mix in the coconut until all of the shredded pieces are well covered in the liquid mixture.
Using 2 small spoons, drop silver dollar size dallops on the baking sheet in a dome shape. (You should be able to fit about 15 on your baking sheet - the entire recipe).
Bake for 7 minutes, rotate the pan and bake an additional 7-8 minutes. The tops and sides should be lightly browned (as shown above). As each oven temperature varies, watch carefully that the macaroons don't burn.
Let cool completely.
In a small microwave safe bowl, microwave the chocolate chips in 15 second intervals, stirring between each. DO NOT overheat the chocolate or it will prematurely harden and will not work. The chocolate should be a nice smooth texture when heated properly.
Meanwhile, place a sheet of waxed paper on the counter near your work space.
Dip the bottoms of the macaroons in the chocolate about 1/4 inch up the side of each and thoroughly coat the bottoms. If the chocolate wants to slide off the bottom of the macaroon, use the back of the spoon to spread the chocolate around until it sticks properly.
Place the coated macaroons on the waxed paper to dry completely.
NOTE: I let mine sit in the refrigerator over night and they tasted even better the next day!

I’m on a gluten free dessert kick and am loving every minute of it! This recipe came about because I was low on ingredients, needed to make a dessert for an event the following day and just happened to have some shredded coconut in my cupboard. I needed to make something quickly and was running out of time between household chores and putting the kids to bed… the story of my life. HA!
