Cheddar Jalapeño Pancetta Corn Bread Muffins

Instructions

Preheat oven to 400 degrees.

In a small pan fry your pancetta.  When done spoon onto a paper towel to drain excess grease. Set aside.

In a medium size mixing bowl combine all other ingredients leaving 1/4 cup of cheese. Add the pancetta and mix thoroughly.  Spray your muffin tin with cooking spray.  Spoon into muffin tin and top with remaining 1/2 cup of cheese.

Bake for 15-20 minutes.  Wonderful hot or cool.Finished corn bread muffins
