Butternut Squash Tortellini

Preheat oven to 375 degrees.

Prepare one large butternut squash using this recipe here.  Once your butternut squash is peeled and cubed, bake it at 350 for 40 minutes and puree it.

Cut the top off of one garlic head. Wrap with tin foil. Pour olive oil over top and seal foil. Bake for 45 minutes. Let cool.

Using water trace the edges of the skin. In a separate pan heat butter on medium high heat stirring constantly.  Butter will begin to brown.  When it turns to a nice golden color remove from heat.  Add black pepper to finish.  Add in tortellini and gently stir to coat. Serve immediately.

I made this for my husband on a recent date night.  No clue why it never crossed my mind to use wonton wrappers instead of pasta dough?? The end result was heavenly!  The texture was perfect and the filling melted in your mouth. The brown butter sauce made the dish so decadent. Overall a very romantic meal.
