Preheat your oven to 400 degrees Fahrenheit.
Spray a roasting dish with non-stick cooking spray.
Remove beet greens. Wash and dry beets. Coat in olive oil and place in the roasting dish. Cover with foil and bake for 1 hour or until the beets are tender when a knife is inserted into the center of the beet. Allow the beets to cool and peel using a paring knife.
While your beets are cooling, prepare the vinaigrette.
We like to place all of the ingredients in a mason jar and shake to emulsify. This is a great job for kiddos helping out. Also, preparing the vinaigrette in a mason jar makes storing the remainder easy.
Slice beets and arrange on a platter. Sprinkle goat cheese over top. Drizzle with vinaigrette.
