Baked Sweet and Blue Purple Potato Fries

Preheat your oven to 400 degrees.

Cut your potatoes into 1/2 inch thick slices.

Line a baking sheet with foil, spray with cooking spray and lay potato slices evenly on the sheet.

Spray the potatoes with additional cooking spray and sprinkle with salt.

Bake for 30 minutes, flipping the fries half way through.

Although it is not necessary, I like to switch my oven to broil and bake the fries for an additional 2 minutes. This gives them the golden brown, crunchy factor. TIP: Watch closely during broiling as food tends to brown very quickly!!

These baked fries are so fun and delicious. The mixture of sweet potatoes and blue purple potatoes make this a colorful side dish or appetizer.

I like to pair mine with Garlic Aioli Dipping Sauce and a Black Bean Burger! Makes a perfect meal.
