Preheat the oven to 375 degrees Fahrenheit.
Prepare a baking pan with tinfoil sprayed with non-stick cooking spray or brushed with oil.
Cut the chicken into thin strips.
In a small bowl combine the egg and honey. Set aside.
In another bowl combine the ground crackers and oats.
Working with one chicken strip at a time dip the strip into the egg and honey mixture. Then, dip the strip into the crackers and oats mixture coating it thoroughly.
Once you lay all of your chicken strips on the pan sprinkle with the garlic, chili powder and ground black pepper.
Bake for 15 minutes or until the chicken is fully cooked in the middle.
